Indigenous People’s Day/ Thanksgiving

I came home from having to work Thanksgiving morning to this perfect Indigenous People’s Day/ Thanksgiving meal completed and ready to eat! I can’t remember the last time I didn’t have to cook at all for a Thanksgiving dinner, likely before I went to Culinary School.

We used Gardein Roast Turk’y, Ikea Lingonberry Jam, and and a Marie Callenders Razzleberry Pie, and the rest is all homemade, which Anabeth made. It’s Cornbread Stuffing, Mashed Purple Sweet Potatoes, Mushroom Gravy, Maple Pecan Yams, Grilled Asparagus, Roasted Brussels Sprouts, Lingonberry Sauce, and Roast Turk’y!

If we are to respect the land and its resources, and the sacred animals that dwell here, there’s no better way to show it than to choose to have a Vegan Thanksgiving.

Skillet-Roasted Meatloaf, Mashed Parslied Red New Potatoes & Champignon Gravy, and Smokey-Grilled Asparagus

This Meatloaf was made using the Don Lee Farms Vegan Burgers we got at Costco, which I feel are far more delicious than the Beyond Burger.
